Sift 4 cups flour,2 TB spoons baking powder and 1/2 tsp salt.
Rub in a heaped TB butter with finger tips until like fine bread crumbs.
Mix 2 cups water with 2 eggs and add to flour and mix to a dough.Allow to stand for about an hour.
Roll out ,cut and braid.
Fry in deep oil for a few minutes until golden brown on both sides.
Remove from oil and quickly dip in to cold syrup.Put syrup bowl in a bowl of ice.
NB I have a friend who is a chef and she says use hot syrup.I have tried it with the same results.This way you don't have to make the syrup the day before.
Syrup
10 cups sugar
5 cups water
1 tsp cream of tartar
1 stick cinnamon or 2tsp glycerine and 1tsp lemon essence
Boil for 5 minutes.
Put in fridge to chill .Or if you prefer use the syrup warm.
Makes about 60 koeksusters.
